Homemade Sausage Rolls

Flaky puff pastry wrapped around juicy, herby sausage meat — perfect for family favourites, parties, or lunchboxes.

These homemade sausage rolls are simple, comforting, and full of flavour. Using easy‑roll puff pastry and sausage meat, you can add apple sauce, cranberry sauce, and herbs to suit your own taste. They bake at 180°C (or gas equivalent) for around 40 minutes, giving you golden, flaky pastry and juicy filling.

Ingredients (makes about 12 small sausage rolls)

  • 350–400g sausage meat or skinned sausages
  • 1 sheet easy‑roll puff pastry (or homemade puff pastry)
  • 2 tbsp apple sauce
  • 2 tbsp cranberry sauce
  • 1 tsp dried rosemary or thyme
  • 1 egg, beaten or 2 tbsp milk, for glazing
  • Salt and pepper, to taste
  • Optional: extra herbs or spices to flavour these to your individual taste

Method

  1. Preheat the oven: Set your oven to 180°C (or gas equivalent).
  2. Prepare the filling: In a bowl, mix the sausage meat with apple sauce, cranberry sauce, rosemary or thyme, and a little salt and pepper. Adjust the flavours to your individual taste — more herbs, extra sweetness, or a touch of spice.
  3. Roll out the pastry: Lay out the puff pastry sheet on a lightly floured surface. Cut into long strips wide enough to wrap around the sausage filling.
  4. Fill and roll: Place a line of sausage mixture along one edge of each pastry strip. Roll the pastry over the filling to form a log, sealing the edge by pressing gently.
  5. Cut into pieces: Slice each log into small sausage rolls, roughly bite‑sized, to make about 12 pieces.
  6. Glaze: Place the sausage rolls on a lined baking tray. Brush the tops with beaten egg or milk for a golden finish.
  7. Bake: Bake for around 40 minutes, or until the pastry is puffed, golden, and the sausage meat is cooked through.
  8. Serve: Enjoy warm or cold. These can be flavoured to your individual taste, making them perfect for family favourites, parties, or quick meals.
