Lasagne

🍝 Homemade Lasagne

A good homemade lasagne is one of those dishes that always feels worth the effort. Rich layers of savoury mince, creamy béchamel sauce and tender pasta sheets come together to create a comforting family favourite that's perfect for sharing.

This version uses plenty of minced beef, mushrooms and tomatoes to create a rich filling. I didn't include onion or garlic because my wife isn't keen on them, which just goes to show that recipes should always be adapted to suit the people you're cooking for.

Homemade Lasagne Lasagne Ready To Serve

🛒 Ingredients

For the Meat Sauce

  • 700g minced beef
  • 2 tins chopped tomatoes
  • Tomato purée
  • Fresh mushrooms, sliced
  • Oregano
  • Salt and pepper to taste
  • Optional: onion
  • Optional: garlic

For the Béchamel Sauce

  • 60g butter
  • 60g plain flour
  • 1½ pints warm milk
  • Optional: 1 tsp mustard

For Assembly

  • Lasagne sheets
  • Grated cheese for topping

👨‍🍳 Method

Making the Meat Sauce

  1. Brown the minced beef in a large pan.
  2. Add the mushrooms and cook until softened.
  3. Stir in the chopped tomatoes and tomato purée.
  4. Add oregano and season to taste.
  5. Allow the sauce to simmer gently until rich and reduced.

Making the Béchamel Sauce

  1. Melt the butter gently in a saucepan.
  2. Add the flour and whisk together to create a roux.
  3. Gradually add the warm milk, whisking continuously to avoid lumps.
  4. Continue whisking until the sauce thickens and becomes smooth.
  5. If desired, add a little mustard to bring out the flavour.

Building the Lasagne

  1. Spread a layer of meat sauce into the bottom of an ovenproof dish.
  2. Add a layer of lasagne sheets.
  3. Spoon over a layer of béchamel sauce.
  4. Repeat the process until you have three layers.
  5. Finish with a final layer of béchamel sauce.
  6. Sprinkle generously with grated cheese.
  7. Bake until golden, bubbling and beautifully coloured on top.

💡 Rustic Tips

  • The quantities can easily be adjusted depending on the size of your dish.
  • A little mustard in the béchamel sauce can add extra depth without overpowering the dish.
  • If your family enjoys onions and garlic, they can easily be added to the meat sauce.
  • Allowing the lasagne to stand for a few minutes before serving makes it easier to portion.
  • Lasagne often tastes even better the following day.

🍽️ Serving Suggestion

A hearty family meal that's perfect for batch cooking and sharing.

One of the things I enjoy most about recipes like this is that there really are no rules. You can add extra vegetables, include onion and garlic if your family enjoys them, adjust the seasoning or even change the herbs entirely. Recipes should always work around the people eating them rather than the other way around.

Lasagne is also a brilliant confidence-building recipe. If it's your first attempt, don't worry about perfectly neat layers or restaurant-style presentation. Homemade food is about learning, improving and enjoying the process. Some of the tastiest meals come from recipes that aren't picture-perfect.
