🥧 Homemade Cottage Pie
Few meals feel quite as comforting as a homemade cottage pie. Rich minced beef, vegetables and gravy are hidden beneath a blanket of fluffy mashed potato before being baked until golden and inviting. It's the sort of meal that fills the kitchen with wonderful aromas and makes everyone eager for dinnertime.
This version was made using minced beef, mushrooms, peppers and some homemade gammon stock that had been frozen earlier. It created a rich, savoury filling packed with flavour and was enough to comfortably feed two people for two days.

🛒 Ingredients
- 400g minced beef
- Mushrooms, chopped
- Peppers, diced
- Homemade gammon stock
- Gravy granules
- Oregano
- Potatoes for mashing
- Butter and milk (optional for mash)
- Salt and pepper to taste
Serves: 2 people for 2 days
👨🍳 Method
- Peel and prepare your potatoes. They can be either boiled or steamed until tender.
- While the potatoes are cooking, brown the minced beef in a large frying pan.
- Add the mushrooms and peppers and continue cooking until softened.
- Pour in the gammon stock and stir well.
- Add gravy granules gradually until the filling reaches your preferred consistency.
- Sprinkle in the oregano and season to taste.
- Allow the mixture to simmer for a few minutes so the flavours can develop.
- Drain the potatoes and mash until smooth. Add butter and a splash of milk if desired.
- Transfer the mince mixture into an ovenproof dish.
- Spoon the mashed potato over the top and spread evenly with a fork.
- Use a fork to create ridges across the surface as these will crisp up beautifully during baking.
- Bake until the topping is golden and the filling is bubbling around the edges.
💡 Rustic Tips
- There are absolutely no rules when it comes to the filling. Use whatever vegetables you have available.
- Carrots, peas, sweetcorn and onions all work beautifully in a cottage pie.
- Homemade stock adds fantastic flavour and is a great way to make use of stock you've frozen from previous meals.
- Steaming potatoes can help reduce excess water and create a fluffier mash.
- Creating ridges in the potato topping helps produce those delicious crispy bits on top.
- Cottage pie often tastes even better the following day.

Serve with seasonal vegetables, garden peas or simply enjoy on its own as a hearty and comforting meal.
Cottage pie is a perfect example of rustic home cooking. The ingredients can change depending on what is available in the fridge, freezer or cupboard. Some people prefer extra vegetables, others enjoy different herbs and some may even swap beef stock for chicken or gammon stock like I did here. There are no strict rules. The best cottage pie is the one that works for you, makes use of what you already have and brings comfort to the table.
