  • 300g macaroni

  • Smoked bacon lardons or chopped bacon rashers
  • Extra grated cheese for topping
  • Optional: breadcrumbs for a crunchy topping
  • Salt and pepper to taste

  1. Bring a large pan of water to the boil and cook the macaroni until tender but still with a little bite.
  2. While the pasta cooks, melt the butter in a saucepan over a gentle heat.
  3. Stir in the flour and cook for a minute or two to form a smooth roux.
  4. Gradually whisk in the warmed milk until the sauce becomes smooth and thick.
  5. Add the bouillon powder or mustard and continue whisking.

  7. In a separate pan, cook the smoked bacon lardons or chopped bacon rashers until golden and slightly crisp.
  8. Drain the macaroni and combine it with the cheese sauce and cooked bacon.
  9. Transfer everything to an ovenproof dish.
  10. Sprinkle over extra grated cheese and, if you like a little crunch, add some breadcrumbs too.
  11. Bake until golden, bubbling and irresistible.
