🥘 Traditional Toad in the Hole
There is something wonderfully comforting about a homemade Toad in the Hole. Crisp, golden Yorkshire pudding rises around juicy sausages to create one of Britain's favourite family meals. Simple ingredients, hearty flavours and plenty of gravy make this a true comfort food classic.
🛒 Ingredients
- 6 pork sausages
- 5 eggs
- Plain flour
- Milk
- 2 tbsp vegetable oil
- Pinch of salt and pepper
👨🍳 Method
- Preheat the oven to 180°C fan.
- Place the sausages onto a baking tray and cook for around 20 minutes until lightly browned.
- Meanwhile, crack the 5 eggs into a measuring jug and note the volume.
- Add an equal volume of plain flour and an equal volume of milk.
- Season lightly with salt and pepper and whisk until smooth and lump free.
- Cover the batter and chill in the fridge for 1 hour.
- Pour the oil into a roasting tin and place it in the oven until extremely hot and shimmering.
- Carefully remove the hot tin and arrange the cooked sausages inside.
- Immediately pour the chilled batter around the sausages. The batter should sizzle as it hits the hot oil.
- Return to the oven and bake for approximately 30–35 minutes until risen, crisp and deeply golden.
- Leave to rest for a couple of minutes before serving.
💡 Rustic Tips
- Chilling the batter helps create a lighter Yorkshire pudding with crisp edges.
- The oil needs to be very hot before adding the batter.
- Try not to open the oven door during baking as this can cause the pudding to sink.
- Good quality sausages make all the difference.
- Serve immediately for the best texture and flavour.
