Chicken Casserole – Slow Cooked
Ingredients (Serves 4)
- 4 chicken breasts — diced and pre‑cooked
- Fresh mushrooms — sliced
- Fresh peppers — chopped
- Fresh carrots — chopped small
- Fresh potatoes — chopped small
- Smoked bacon — chopped
- Mixed beans in tomato sauce
- 1 tin chopped tomatoes — for the sauce
- Salt & pepper — optional
Method
- Pre‑cook the diced chicken breasts in a pan until sealed.
- Chop all vegetables small so they cook evenly in the slow cooker.
- Add everything — chicken, mushrooms, peppers, carrots, potatoes, smoked bacon, mixed beans, and chopped tomatoes — straight into the slow cooker.
- Mix well so the sauce coats everything.
- Cook on LOW for the entire day — from morning until you get home.
- Optional: Season with salt and pepper before serving.
