🍮 Traditional Treacle Pudding with Homemade Custard

Treacle pudding is one of those comforting desserts that brings back happy memories. Soft steamed sponge, rich golden syrup and warm homemade custard create a pudding that's wonderfully nostalgic and perfect for colder evenings.

Growing up, we would often serve ours with a little extra treacle spooned over the top for even more sweetness and flavour. It's a simple touch that makes this classic dessert feel even more special.

🛒 Ingredients

Treacle Pudding

  • 150g self-raising flour
  • 75g suet or softened butter
  • 75g caster sugar
  • 1 egg
  • 150ml milk
  • ½ tsp vanilla extract
  • 4–5 tbsp golden syrup (or black treacle for a deeper flavour)

Homemade Custard

  • 300ml whole milk
  • 200ml double cream
  • 4 egg yolks
  • 60g caster sugar
  • 1 tsp vanilla extract or half a vanilla pod

👨‍🍳 Method

Making the Treacle Pudding

  1. Grease a 1-litre pudding basin.
  2. Spoon 2–3 tablespoons of golden syrup into the bottom of the basin.
  3. In a mixing bowl, combine the flour, suet or butter, sugar, egg, milk and vanilla.
  4. Mix until you have a smooth, thick batter.
  5. Pour the batter carefully over the syrup.
  6. Cover with baking paper and foil, securing with string if required.
  7. Place into a steamer or saucepan containing water that comes about halfway up the basin.
  8. Steam gently for approximately 1 hour 45 minutes.
  9. Check the water level occasionally and top up when needed.
  10. Carefully turn the pudding out onto a serving plate and allow the syrup to run down the sides.

Making the Custard

  1. Gently heat the milk and cream until steaming but not boiling.
  2. In a separate bowl, whisk together the egg yolks and sugar until pale and slightly thickened.
  3. Slowly pour the warmed milk mixture into the yolks whilst whisking continuously.
  4. Return the mixture to the saucepan.
  5. Cook gently over a low heat, stirring constantly.
  6. Continue cooking until the custard is thick enough to coat the back of a spoon.
  7. Stir in the vanilla and serve warm.

💡 Rustic Tips

  • Golden syrup gives a classic flavour, whilst black treacle creates a richer and deeper taste.
  • Don't allow the custard to boil as it may split.
  • Keep an eye on the steaming water and top up when necessary.
