🍂 Cranberry & Sultana Flapjacks

Soft, golden and packed with cosy autumn flavour, these Cranberry & Sultana Flapjacks are one of those bakes that fill the kitchen with the most wonderful aroma. Made in a large tray, they're perfect for sharing with family, popping into lunch boxes or keeping in a tin ready for those moments when you fancy something sweet with a cup of tea.

This was one of those slow Sunday bakes where simple ingredients came together beautifully. The combination of juicy cranberries, sweet sultanas and buttery oats creates a flapjack that's soft, chewy and packed with comforting flavour.

Cranberry and Sultana Flapjacks Freshly Baked Flapjacks

🛒 Ingredients

  • 225g unsalted butter
  • 225g soft brown sugar
  • 225g golden syrup
  • 500g porridge oats
  • 100g sultanas
  • 100g dried cranberries
  • Optional: 1 tsp vanilla extract
  • Optional: pinch of salt
  • Optional: orange zest

Tray Size: 13.5 × 8 inch tray
Prep Time: 10 minutes
Bake Time: 25–30 minutes
Makes: Approximately 20–24 squares

👨‍🍳 Method

  1. Preheat your oven to 160°C fan and line a 13.5 × 8 inch baking tray.
  2. Place the butter, soft brown sugar and golden syrup into a large saucepan.
  3. Heat gently, stirring occasionally until everything has melted together into a smooth mixture.
  4. If using vanilla, orange zest or a pinch of salt, add them now.
  5. Remove from the heat and stir in the porridge oats, cranberries and sultanas until everything is evenly coated.
  6. Transfer the mixture into the prepared tray.
  7. Press down firmly using the back of a spoon or spatula to create an even layer.
  8. Bake for 25–30 minutes until lightly golden around the edges.
  9. Allow the flapjack to cool completely before slicing into squares. This helps them hold together and creates that lovely chewy texture.

💡 Rustic Tips

  • For softer flapjacks, remove them when lightly golden.
  • If you prefer a firmer flapjack, bake for a few extra minutes.
  • Pressing the mixture firmly into the tray helps prevent crumbly flapjacks.
  • Store in an airtight container where they'll happily keep for several days.
  • These flapjacks freeze surprisingly well, making them ideal for batch baking.
  • Try warming a square for a few seconds and serving with a cuppa on a cold afternoon.

🍽️ Serving Suggestion

Perfect with a mug of tea, fresh coffee or tucked into a lunch box. They also make a lovely homemade treat to share with friends and family.

🌿 Rustic Flow Note

One of the things I love most about flapjacks is that there really are no rules. Whilst I used cranberries and sultanas here, you could easily swap them for raisins, chopped apricots, dates, mixed fruit or even dried cherries. You can add seeds, nuts, spices or citrus zest depending on what you have available in the cupboard. That's the beauty of rustic home baking. It isn't about following every ingredient list perfectly. It's about creating something delicious using what you have, reducing waste and adding your own personal touch along the way.
