🍌 Banana Choc-Chip & Marmalade Loaf
A cosy, sweet loaf packed with melted chocolate pockets and little bursts of marmalade joy. Perfect with a cup of tea on a rainy afternoon.
🛒 Ingredients
- 4 ripe bananas, mashed
- 75g baking margarine, melted
- 150g sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tsp baking powder
- Pinch of salt
- 220g plain flour
- 120g chocolate chips
- 2–3 tbsp marmalade (thick-cut works beautifully)
👩🍳 Method
- Preheat oven to 180°C (160°C fan). Line a loaf tin with baking paper.
- Mix together the mashed bananas, melted margarine, sugar, egg and vanilla extract until well combined.
- Stir in the baking powder and salt, then add the flour and mix until just combined.
- Fold in the chocolate chips.
- Spoon half of the mixture into the prepared loaf tin.
- Dot 1–2 tablespoons of marmalade across the middle.
- Add the remaining batter and swirl the remaining marmalade over the top using a knife.
- Bake for 55–70 minutes, or until a skewer inserted into the centre comes out clean.
- Allow the loaf to cool in the tin for 10 minutes before transferring to a wire rack.
💡 Rustic Tips
- The riper the bananas, the sweeter and more flavourful your loaf will be.
- For a traditional banana loaf, simply leave out the chocolate chips and marmalade. The recipe works perfectly as a delicious plain banana loaf.
- Dark chocolate chips create a lovely contrast against the sweetness of the bananas and marmalade.
- If your loaf starts browning too quickly, loosely cover the top with foil during the final 15–20 minutes of baking.
- This loaf freezes well. Slice before freezing so you can enjoy a piece whenever the craving strikes.

Serve thick slices warm or cold with a mug of tea, fresh coffee, or a little butter spread over the top for an extra comforting treat.
