🫖 Homemade Crumpets

There is something rather special about homemade crumpets fresh from the pan. Light, soft and full of those famous little holes, they're perfect toasted and smothered in butter while still warm. Although they look impressive, they're surprisingly simple to make and only require a handful of pantry ingredients.

This small batch recipe is ideal for a lazy weekend breakfast or afternoon treat. Watching the bubbles appear as they cook is half the fun and the aroma filling the kitchen makes the wait worthwhile.

🛒 Ingredients

  • 225g plain flour
  • 1 tsp fast-action dried yeast
  • 1 tsp sugar
  • 175ml warm milk
  • 175ml warm water
  • ½ tsp salt
  • ½ tsp bicarbonate of soda
  • 1 tbsp warm water (for the bicarbonate)
  • Butter or oil for greasing rings and pan

Makes: 6–8 crumpets

👨‍🍳 Method

  1. Place the flour, yeast and sugar into a mixing bowl.
  2. Gradually pour in the warm milk and warm water, whisking until smooth.
  3. Cover the bowl and leave somewhere warm for around 45–60 minutes until bubbly and slightly risen.
  4. Mix the bicarbonate of soda with 1 tablespoon of warm water and stir it into the batter along with the salt.
  5. Lightly grease your crumpet rings and a non-stick frying pan.
  6. Place the rings into the pan over a low to medium heat.
  7. Fill each ring about halfway with batter.
  8. Cook gently for around 6–8 minutes until lots of holes appear on the surface and the top begins to look set.
  9. Remove the rings carefully and turn the crumpets over for 30–60 seconds to lightly colour the tops.
  10. Serve warm or allow to cool before toasting later.

  • Crumpet rings give the best shape and help create those classic tall crumpets.
  • If you don't own crumpet rings, large metal cookie cutters can work as a handy alternative.
  • Grease the rings well to help the crumpets release easily.
  • A lower cooking temperature helps create more of the characteristic holes.
  • Homemade crumpets freeze beautifully and can be toasted straight from frozen.
  • Don't rush the proving stage. The bubbles are what help create the classic crumpet texture.

🍽️ Serving Suggestion

Serve warm with plenty of melted butter or enjoy with jam, marmalade, honey, peanut butter or even a poached egg for a savoury twist.
