Easy Fluffy Pancakes π₯β¨
Light, soft, and beautifully fluffy β perfect for breakfast, brunch, or a weekend treat.
These pancakes are incredibly easy to make and turn out fluffy every time. I found it easiest to use a ladle to scoop the batter into the pan β it gives each pancake a perfect round shape. This batch was served with fresh strawberries, honey, and my homemade blackberry syrup for a sweet, fruity finish. ππ― You can also add blueberries to the batter for delicious blueberry pancakes. π«
Ingredients
- 1 cup (125β―g) plain flour
- 2 tbsp sugar
- 2 tsp baking powder
- Pinch of salt
- 1 cup (240β―ml) milk
- 1 large egg
- 2 tbsp melted butter or oil
- Optional: Β½ tsp vanilla extract
- Optional: A handful of blueberries for blueberry pancakes π«
Method
- Mix the dry ingredients: Add flour, sugar, baking powder, and salt to a bowl.
- Combine the wet ingredients: Whisk the milk, egg, melted butter, and vanilla in a separate bowl.
- Bring together: Pour the wet mixture into the dry and stir gently. A few small lumps are fine.
- Heat the pan: Warm a nonβstick pan on medium and lightly grease it.
- Pour the batter: Use a ladle to add about ΒΌ cup of batter per pancake. If making blueberry pancakes, sprinkle a few blueberries on top before flipping.
- Cook: Wait for bubbles to form, flip, and cook until golden.
- Serve: Enjoy warm with strawberries, honey, yoghurt, syrup, fruit, or homemade blackberry syrup. ππ―
