Easy Fluffy Pancakes πŸ₯žβœ¨

Light, soft, and beautifully fluffy β€” perfect for breakfast, brunch, or a weekend treat.

These pancakes are incredibly easy to make and turn out fluffy every time. I found it easiest to use a ladle to scoop the batter into the pan β€” it gives each pancake a perfect round shape. This batch was served with fresh strawberries, honey, and my homemade blackberry syrup for a sweet, fruity finish. πŸ“πŸ― You can also add blueberries to the batter for delicious blueberry pancakes. 🫐

Ingredients

  • 1 cup (125β€―g) plain flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • Pinch of salt
  • 1 cup (240β€―ml) milk
  • 1 large egg
  • 2 tbsp melted butter or oil
  • Optional: Β½ tsp vanilla extract
  • Optional: A handful of blueberries for blueberry pancakes 🫐

Method

  1. Mix the dry ingredients: Add flour, sugar, baking powder, and salt to a bowl.
  2. Combine the wet ingredients: Whisk the milk, egg, melted butter, and vanilla in a separate bowl.
  3. Bring together: Pour the wet mixture into the dry and stir gently. A few small lumps are fine.
  4. Heat the pan: Warm a non‑stick pan on medium and lightly grease it.
  5. Pour the batter: Use a ladle to add about ΒΌ cup of batter per pancake. If making blueberry pancakes, sprinkle a few blueberries on top before flipping.
  6. Cook: Wait for bubbles to form, flip, and cook until golden.
  7. Serve: Enjoy warm with strawberries, honey, yoghurt, syrup, fruit, or homemade blackberry syrup. πŸ“πŸ―
