Homemade Stuffing 🎄🥘
A rich, stuffing with sausage meat, smoked bacon, sage, cranberry and homemade breadcrumbs — perfect for roast dinners and Christmas.
Ingredients (guide amounts)
All ingredients are a guide — you can judge the proportions depending on your personal taste.
- Sausage meat or skinned sausages (more economical)
- Chopped smoked bacon
- Cranberry sauce
- Apple sauce
- Homemade breadcrumbs (any leftover can be frozen)
- Dried sage
- Optional extras: orange juice, nuts, honey
- Salt and pepper, to taste
Method
- Prepare the sausage base: Remove skins if using sausages and place the sausage meat in a large bowl.
- Add the bacon: Chop smoked bacon into small pieces and add to the bowl.
- Mix in the flavour: Add cranberry sauce, apple sauce and a generous handful of homemade breadcrumbs.
- Season: Sprinkle in dried sage, salt and pepper. Adjust to taste.
- Optional extras: Add a splash of orange juice, some chopped nuts or a drizzle of honey if you like a sweeter, richer stuffing.
- Combine: Mix everything together well with clean hands until evenly combined. Add more breadcrumbs if the mixture feels too wet.
- Shape: Press into a baking dish or shape into balls/patties and place on a tray.
- Bake: Cook at 180°C for around 45 minutes, depending on the size and thickness, until cooked through and nicely browned.
- Serve: Rest for a few minutes, then serve with your roast dinner or any suitable meal.
Notes & Tips
- This stuffing is amazing for Christmas festivities and Sunday roasts.
- Making extra for another day is a must — it can be frozen after cooking.
- Leftover homemade breadcrumbs can also be frozen for future recipes.
- Adjust sweetness, herbiness and texture to match your personal taste.
